Yields approximately 32 treats
Ingredients:
¼ Cup melted coconut oil (slightly cooled)
¾ Cup unsweetened applesauce
1 scant cup of canned pumpkin
½ tsp vanilla
2 tsp cinnamon
½ cups oats
¾ cup whole wheat flour
1 tsp baking powder
½ cup carob chips
Instructions:
Preheat oven to 350 degrees Fahrenheit
Mix coconut oil, applesauce and pumpkin until well combined.
Then add vanilla and cinnamon until incorporated. Add oats, flour, baking
powder and carob chips until mixed.
Place a rounded teaspoon of batter on a silpat or parchment
lined baking sheet allowing at least an inch between each scoop. Flatten out
the batter with the back of the spoon slightly to resemble a pumpkin shape; and
using a small amount of batter, form a stem.
Bake for approximately 12 minutes. Treats should be lightly
brown and slightly firm.
